😎 In Search of the Perfect Summer Blend? ETHEREAL is here!

As our days stretch longer and temperatures climb, coffee rituals begin to shift. Steam gives way to clinked ice. Mugs are traded for tumblers. We don’t stop drinking coffee in the summer—we may even ask more of it. We ask it to cool us down, to wake us gently, to travel with us to porches, parks, and beaches. We ask for something refreshing, but still familiar. And to answer that call, we’re pleased to introduce our 2025 Ethereal Summer Blend!

Our Ethereal Summer Blend is our seasonal release created with the warm months in mind. This isn’t just another coffee repurposed for iced coffees. It’s a blend crafted specifically for the demands of summer: smooth, refreshing, and versatile enough to shine whether served cold, over ice, or steaming in the first quiet hours of the morning. While it was designed with cold brew in mind—slow-steeped, smooth-bodied, endlessly drinkable—it performs just as well as a pour-over, an iced Americano, or even a traditional hot brew.

Ethereal Summer is the product of a thoughtful marriage between two distinct coffees—Eclipse, our signature dark roast known for its rich, grounding depth, and Poaquil Natural, our lighter, fruit-forward roast grown exclusively for us by our farmer partners in Guatemala. On their own, each offers something special. Together, they form a conversation between classic and contemporary: the deep roasted and caramel notes balanced by the brightness and red fruit complexity of a modern natural. The resulting cup is layered yet familiar—refreshing, but with enough backbone to satisfy.

Behind this blend is also plenty of impact at origin. It features high-impact coffees grown in Comayagua, Honduras, and Chimaltenango, Guatemala—two high-altitude regions known for their quality. The farmers behind it—members of the Mtn2Sea Ministries Farmer CoOp and the La Asuncion Co-Op—represent two of our most impactful partnerships yet, as we actively champion life-changing prices for their best coffees.

For the perfect cold brew at home, start with 100 grams of coarsely ground coffee for every liter of water. Steep in the fridge for 20 to 22 hours. For those who want to extend their batch’s shelf life and extract even more flavor, try a brief “hot bloom” before steeping: add just enough boiling water to saturate the grounds before adding the rest of the cold water. It’s a small detail that can make a big difference, especially if you’re making Cold Brew for the whole week, or to travel with you!

Ethereal Summer Blend is more than just a seasonal offering. It’s a reflection of the moment we’re in: a time to slow down, to savor, to chase flavor across borders and processes and brewing styles. Available now—but only for the Summer (i.e. until Labor Day)!

Summer is here, and we’re excited to welcome it with our 2023 edition of Ethereal Summer Blend! - sweet, smooth, refreshing - it’s the perfect blend to enjoy during the hot summer months - both as an energizing cup in the morning, and later in the day as a refreshing iced or cold brew. We’ll re-visit our favorite iced and cold brew recipes and tricks on our “Monday Bit” this Summer (we post new “bits” every Monday on our Instagram @ethosroasters, and you can always watch past “bits” by visiting the Monday Bit highlights in our profile).

This year’s Ethereal features both Poaquil (natural process, Guatemala) and Pacheco (honey process, Honduras) to create a sweet, high-impact coffee blend that's perfect for summer sipping. RE : Cold Brewing 101 ☀️

Happy Summer Solstice! We’re celebrating with the launch of our 2021 Ethereal Summer Blend (featuring our limited-release Colombian Natural “La Estrella” this year), and wanted to devote this first “Summer Series” edition to re-visiting the coffee drink that is almost synonymous with summer: Cold Brew!

Want to know our secret for great Cold Brew every time? Get these basics right:

(1) Coffee - we’ve found that the best Cold Brew is actually made from beans that have been allowed to rest a few days before Cold Brewing (as the fast de-gassing of freshly roasted beans seems interfere with the extraction). In fact, Cold Brew is a great method to use some of your “older” Ethos beans!

(2) Water - its impact on flavor simply can’t be emphasized enough! Bad quality water (i.e. tap water that tastes like chlorine or is too hard/soft) can ruin the taste of even the best beans… remember the final brew is over 90% water!

(3) Filter - using a good cold brew paper filter has a big impact on the clarity and quality of flavors. We’ve also found re-usable cloth filters perform well when you use a set of two and clean them throughly after each batch. And while you can make Cold Brew without a paper or cloth filter, the flavor difference is so pronounced, that we must recommend you use one! (it filters out the oils, diterpenes, and some of the fines from your brew, for a much cleaner taste).

(4) Grind - coarsely ground coffee will always work best for the prolonged cold brew extraction times. While you may be tempted to use a finer grind to “accelerate” the process, it may only result in a more acidic, unbalanced brew. When cold brewing, good things do take time! (about 20-22 hours to be precise)

(5) Ratio - this one is listed last because there may not be a single “ideal ratio” - it all depends on how strong you’d like your brew, or if you’ll be adding more/less ice, milks, etc. We would recommend you start with a 1:8 (i.e. one ounce of coffee for every 8 ounces of water… which happens to be the ratio we use for our Cold Brew for Saturday markets!), and adjust if needed. This concentrate will hold well to dilution with ice, milks, and sweeteners.
